Coconut Matcha Granola (Vegan Green Tea Granola)

Good God, it’s Green Granola! Well, green-tinted granola anyways. This vegan breakfast option is made with two main flavors- green tea and coconut. Make on Sunday, and enjoy all week, this vegan matcha granola is perfect in parfaits, on yogurt, topping ice cream, or – my favorite- just with a little soy milk for breakfast. This simple, fuss-free recipe uses just 7 ingredients, all of which are common and readily available (with the possible exception of the matcha powder itself). All in all, it only takes about 30 minutes to make, and is not only vegan but gluten-free!

What is Matcha?

The first time I remember having matcha powder was in a super sugary green tea Frappuccino from Starbucks. While their version is primarily sugar, ice and whipped cream the distinct matcha flavor is still able to power through and make an appearance. Matcha powder is a finely ground green tea, originating in China. Because it is powdered, it is used more like cocoa powder than tea- it can be dissolved into water and drank, used to dye and flavor foods and even used in baking. I think of it as to green tea what instant espresso is to coffee. I buy my matcha at the local Asian supermarket, but you may be able to find it at other large grocery stores, and if not there is always the internet! When using matcha it is important to remember that a little bit goes a long way- my recipe uses 1 tablespoon., and the result is a balanced blend between the matcha and the coconut. How to Make Matcha Granola

This green tea coconut granola recipe works a lot like the Banana Granola recipe I published earlier. It is created on a base of oats, coated with oil and sugar. This time its flavored not only with matcha but also with coconut. By adding coconut cream to the coating, each oat has a little coconut flavor, and to boost it up a notch I’ve added half a cup of coconut flakes to the granola. As they toast and become golden in the oven, they develop a delightfully crisp, chewy texture and as well contributing to the overall coconutiness of the granola. Granola is one of those things that likes to burn on you- make sure after the first 15 minutes in the oven, you keep a good eye on it. A little browning on the edges is fine, but that can quickly turn burnt so take it out a few minutes early if need be. Once your granola is baked, make sure you let it cool down completely. It hardens during that time, and turns from mushy to crunchy! Wait until its totally cooled to transfer to your airtight container, or it won’t get the right texture.

Coconut Matcha Granola (Vegan Green Tea Granola)

Green Tea Coconut Granola

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Yield: 3 cups of granola

Green Tea Coconut Granola

Ingredients

  • 2 ½ cups of old fashioned oats
  • ½ cup shredded coconut
  • ½ cup of coconut cream
  • ½ cup of canola or other mild oil
  • ½ cup of vegan granulated sugar
  • 1 tsp. vanilla extract
  • 1 tbsp. matcha powder

Instructions

  1. Preheat the oven to 350 degrees F. In a large mixing bowl combine the oats and shredded coconut. Set aside.
  2. In a small saucepan at medium heat add the sugar, oil, coconut cream, vanilla and matcha powder and stir until it is combined and all the coconut cream is melted into the mixture.
  3. Using a silicone spatula, scrape the wet ingredients over the oats and coconut. Fold until all the oats are covered.
  4. Spread the granola evenly on a baking sheet (no need to grease it). Bake for a total of 25 minutes, taking it out once and stirring after the first 15 minutes. If you see excessive browning remove earlier so it does not burn. Remove from the oven and let cool to room temperature. Once the granola is cooled it should hardened. Eat right away or store in an airtight container.
