Quick and Easy Cheesy Vegan Croutons

Croutons- Worse than Potato Chips

I can’t keep potato chips in the house, because in a shockingly short period of time I will have eaten them. If there are potato chips around, chances are I’ll start snacking on them only to realize that the bag is empty and I no longer need lunch. And croutons are if anything, worse. Over the course of taking photos of this recipe, I managed to eat almost half of them- that’s half a loaf of bread! I actually have a somewhat clear memory of being a young child, just old enough to see the top of the stove, and going over to a friends house to find homemade croutons cooling on top of the oven. I had never had homemade croutons before, and was amazed and delighted by the crispy, salty bits of bread, and every time I went through the kitchen another crouton or two would disappear off the tray, leaving a sizeable empty spot where my hands could reach as I left.

Making Cheesy Vegan Croutons

The great thing about making croutons is that it’s super easy! Start with your bread. I like to use a good sourdough bread, but just make sure you use something hearty. Slice your bread into cubes- some people prefer to remove the crusts, although I leave mine on. I think they add some great textural variation, but they do definitely make your croutons a little harder, and also turn darker. Either way, the next step is to add them to a large bowl and add some oil oil, nutritional yeast, and spices. Place the bread on a large baking sheet, and spread it out. Then toast in the oven for 10 minutes. Take them out, flip them around, and give it another 5-10 minutes. Let them cool, and store them in an airtight container for as long as you can resist eating them!

Quick and Easy Cheesy Vegan Croutons

Ingredients

  • 1 lb. stale bread (sourdough is best)
  • ¼ cup olive oil
  • 2 tbsp. nutritional yeast
  • 1 tsp. garlic powder
  • ½ tsp. salt

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the bread into ½-1 inch chunks and place in a large bowl. Add the olive oil, nutritional yeast, garlic powder and salt and toss the spices and oil evenly on the bread.
  2. Place in the oven for 10 minutes, remove and flip before returning to the oven for another 5-10 minutes (depending on how crispy you like them).
