Finding Vegan Stouts

I come from a family that appreciates a good beer. Most of us aren’t big drinkers, but we do appreciate a well-made, deliciously flavored, nice quality beer. Typically, I tend to go for IPA’s- their bright, hoppiness is something I respond to. For this recipe, however, I decided to use a stout- a type of beer I hadn’t had in a while, but remembered it for it’s dark, sweet, mellow flavor. Stouts are one of the coziest types of beer- they have a sweet malty flavor, and often notes of chocolate or coffee, with an almost creamy mouth-feel. Now here’s the kicker- not all beer is vegan, and not all stouts are vegan. Most commonly, lactose can be found in a stout (although there are other possible fining agents, and honey to look out for). How do you find the perfect vegan stout? I use Barnivore, a user-created database where the responses about a company’s beers are collected in a search-friendly format (the exact beer I used for this stout, pecan and ginger bread was a stout named “Black” by Allagash up in Maine).

Making Stout, Pecan and Ginger Bread

This stout, pecan and ginger bread is a spiced, sweet bread delight. Dry and wet ingredients are mixed separately before being combined, and folding crushed pecans in. The whole batter is then transferred into a greased loaf pan and slid into the oven. Next comes the hardest part- keeping away from the oven while the loaf bakes. For the next 45 minutes to an hour, you will be greeted with smells of warm ginger, toasting pecans, sweet, rich, stout, coffee, chocolate, molasses, vanilla, cinnamon, browning sugar. And you have to stay away. You need to wait until the loaf is cooked, and even after that until it’s cooled (although I admit- I never make it through that second part before digging in). But it’s well-worth that exercise in patience. So come along, lovers of winter, it’s time to get a stout, pecan, and ginger bread loaf cooling on your kitchen counter.

Stout, Pecan and Ginger Bread (Vegan)

Stout, Pecan and Ginger Bread (Vegan)

Ingredients

  • 2 ½ cups all-purpose flour
  • ½ cup brown sugar
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 TBSP. dried ground ginger
  • 2 tsp. cinnamon
  • ¼ tsp. ground coriander
  • Pinch of salt
  • 1/3 cup melted coconut oil
  • ¼ cup blackstrap molasses
  • 2 TBSP. apple cider vinegar
  • 1 tsp. vanilla extract
  • 1 cup vegan stout
  • ½- 1 cup loosely chopped pecans

Instructions

  1. Preheat the oven to 350°F (190°C) and grease a loaf pan.
  2. In a large bowl, combine the flour, brown sugar, baking soda, baking powder, ginger, cinnamon, coriander and salt. Mix until well combined and set aside. In a second bowl, combine the coconut oil, molasses, apple cider vinegar, and vanilla extract. Stir well before adding the stout, and stirring lightly. Add to the dry ingredients and combine. Finally, fold in the pecans.
  3. Scrape the batter into the prepared loaf pan. Spread somewhat evenly, and place in the oven. Allow to bake for 45-60 minutes, until a toothpick inserted into the loaf comes out clean. Run around the edges with a butter knife before flipping onto a cooling rack and allowing to cool fully before cutting.
