Spicy Garlic Roasted Chickpeas Snack

What’s on the table today? Basically the perfect snack. Spicy garlic roasted chickpeas, still a little warm from the oven. On the outside they’re hard and crispy. On the inside, this snack becomes soft, so it just melts in your mouth. These chickpeas are spiced simply, but with impact, using classic flavors. Garlic, chili flakes, salt and pepper. Rounded off with a little olive oil to crisp up the beans, and we have the protein-packed, super strong, healthier cousin of the potato chip. Although potato chips don’t have the delicious, soft center these chickpeas do, and their powder-based flavors are not as satisfying as some good old fashioned garlic.

Let’s talk about nutrition here for a minute. These are pretty darn healthy for you, mostly because they’re high in protein. And while I’m not exactly dying from lack of protein (I get my aminos from all sorts of plants), it is good to know that I have snacks that can help fill up my protein supply. Plus I’m constantly searching for ways to fulfill my potato chip cravings, that don’t involve eating an entire family-sized bag of potato chips. Spicy Garlic Roasted Chickpeas- The Flip Side of Aquafaba

I’m also always searching for ways to use chickpeas. Because I love using aquafaba (the liquid that the chickpeas come in) as an egg replacer when baking (like I did in this clafoutis recipe), I need a good steady source of chickpea recipes. Because using the chickpea water without the chickpeas is just a little wasteful seeming. And one can only make so much hummus before it becomes time to search for a few more uses. I’ve tried chickpeas in all sorts of salads, stir-frys and curries- some are really good, but many just taste like a can of chickpeas, tossed into a dish. Out of place, not elevated and really not rocking my world. When I take the time to cook, I want to taste the difference and know that the efforts I took improved and transformed the ingredients I started with. That’s one of the reasons I really love these spicy garlic roasted chickpeas- because I feel like they do take chickpeas to a new level- the texture on the outside and inside change, and their bursting with flavor.

How to Make Spicy Garlic Roasted Chickpeas

One of the best things about this recipe is it’s easy. Preheat the oven. Take the chickpeas and drain them. Add the spices and oil. Roast them. Let them cool. Eat. It’s so simple you don’t even need a recipe (but I’ve included one for you anyways- after all, it’s what I do). While I love the spices I used in this recipe, there are many others that would be tasty- try this recipe out, or change it up and use your favorite herbs- either way, let me know in the comments!

Spicy Garlic Roasted Chickpeas Snack

Ingredients

  • 1 15 oz. can (1 ½ cups) of chickpeas
  • 2-3 cloves of garlic
  • 1 tsp. red chili flakes
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • 2 tbsp. olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Drain the chickpeas (save the liquid for another recipe!) and rinse them well. Gently pat dry and put in a large bowl.
  2. Mince the garlic, and add it to the chickpeas. Add all the other ingredients (chili flakes, salt, pepper, and oil) and toss until it is evenly mixed.
  3. Place in the preheated oven for 25 minutes. Remove from the oven and allow to cool before eating.
