Vegan Miso Napa Cabbage Slaw

What the Hell, Hellmann’s?!?
So calling out brands is not something I do a lot- honestly, who has the time- but Hellmann’s needs a little reality check. When they first came out with their vegan mayonnaise a few years ago, I was impressed. It was pretty darn good, affordable, and I could find it in just about any store. Life had gotten easier, for us mayo-loving vegans. But then something happened. Around March of 2020, as COVID started wreaking havoc across the United States, Hellmann’s added to the chaos with something else horrible- their new formula. They took a nice, creamy mayo, and made it taste like a combination of old oil and plastic. Why? Why, why, and why???
When I first wrote this post in 2017, you could get a good mayo from Trader Joe’s- I don’t know if they still make it, but I don’t think so- at least my store now never has it. Just Mayo was also a good option, but since they had massive success with the Just Egg, the mayo is hard to come by. I feel like I was living, blissfully unaware, in 2017 in a vegan mayonnaise filled paradise, where good, affordable vegan mayo was at every store. My best recommendation for you now, early 2021, is go find some Vegenaise– it’s delicious! If you have other vegan mayo brands you like, please drop them in the comments. And in case you were wondering (I was), it’s pronounced “Vedge-en-aise”, not “VEEG-en-aise”.

Making Miso Napa Cabbage Slaw
This is a great side dish, because it’s easy to make, goes with a lot of different meals, and keeps well in the fridge. In fact, I almost find it better after it’s spent a day to two in the fridge, letting all those flavors marinate together. It’s a great option to meal prep, and use in different meals throughout the week. Start with your vegetables- prepare the cabbage and onion by slicing them thinly, and grate the carrot. If you have other vegetables you like raw, through them in too! I sometimes add a little purple cabbage, or bell peppers, or some raw grated yellow beets! Next create the dressing by mixing the remaining ingredients together. You may want to add a little more garlic chili sauce, if you want to get a little kick. Make sure to stir well, as if you don’t the miso will stay in larger clumps instead of integrating into the dressing. Pour the dressing over the cabbage and onions, and stir until it is all covered. Serve room temperature or chilled, and enjoy!
Creamy Miso Napa Cabbage Slaw (Vegan)
Ingredients
- ½ head napa cabbage
- 1 small purple onion
- 1 large carrot
- 2/3 cup of vegan mayo
- 2 TBSP miso (any type)
- 1 tsp. garlic chili paste
- Freshly ground black pepper
- 1 tbsp. sesame seeds (optional)
Instructions
- Remove the core/stem from the cabbage, and slice into thin strips. Thinly slice the onion as well, and use a grater to grate the carrot. Place all your vegetables in a large bowl.
- Mix together the vegan mayonnaise, miso and garlic chili paste. Make sure there are no large clumps of miso in your dressing. Add the dressing to your vegetables, add a crack of freshly ground pepper, and toss well, until all of the cabbage is covered. Garnish with sesame seeds, if desired. Serve immediately, or chill before serving.
Notes
If you like a lot of dressing on your slaw, you might want to increase it. Simply use 1 cup vegan mayonnaise, 3 tbsp. miso, and 1 ½ tsp. garlic chili paste.
