Great Vegan BBQ without a Grill + Cauliflower Tacos
The internet is full of vegan recipes, but there’s nothing quite like a book. You don’t need to rack your brain to decide what to google, instead you can enjoy the relaxing exercise of browsing a recipe collection that has been lovingly curated for you. One of my favorite activities is to flip through the pages of a cookbook, getting inspiration and new ideas. My most recent cookbook acquisition is “Great American BBQ Without a Grill” by Linda and Alex Meyer of Veganosity. Linda and Alex are a team of mother-daughter bloggers, who have a passion for sharing their plant-based recipes. Their book, Great Vegan BBQ Without a Grill, brings together all the elements you might need to have a delicious, vegan BBQ. In this post, I’m going to share my thoughts on their book and then give you a quick taste of what this book includes with their recipe for Boot Kickin’ Cauliflower Tacos.
About the Great Vegan BBQ without a Grill
Great Vegan BBQ Without a Grill contains a recipe to replace any non-vegan BBQ classic you can think of. The book has over 75 different recipes and is organized into sections. First, we have Meat-Free BBQ to Satisfy Meat Eaters which contains recipes such as BBQ ribs, and jerk chik’n. The next section takes you on a little culinary tour of America with “Burgers and Sandwiches, from way up north to the deep south” where you will find all sorts of burgers, po’ boys, and the cauliflower tacos I’m going to be sharing with you all (or maybe I should say “ya’ll”). There is a short section of food on a stick (kabobs, skewers) followed by a section “stuffed” with recipes like loaded BBQ potatoes and stuffed peppers. And while we might be done with the meat of the book, the recipes don’t end there. There is a mouth watering section on sides, with salads, grits, and roasted vegetables, an entire section on dips and other classic party fare, and last but not least “Keeping it Saucy: BBQ Sauces and Rubs”. In short, literally any recipe you might want for your summer BBQ or picnic. Not only does this book contain a huge repertoire of vegan BBQ, but my one of my favorite parts are the pictures. Each recipe is accompanied by a full-page image, so mouthwateringly stunning my stomach starts growling almost immediately.
Why You Need Great Vegan BBQ without a Grill
This book is perfect for people (such as myself), who don’t own a grill but still want to get that summer taste. It’s also one of those books that highlights that being vegan isn’t about giving things up- it’s about getting creative. Sure, you don’t eat meat, dairy or eggs anymore, but that doesn’t mean you can’t enjoy the same flavors you’ve learned to love- in this case, the smoky, sweet, spicy, punch-packing BBQ classics. They’re also the perfect recipes for new vegans, or people who want to try and eat more vegan meals- they’ll be familiar, but better for the environment, your health, and animals.

About the Recipe
Making Boot Kickin’ BBQ Tacos
I chose to share Linda and Alex’s “Boot Kickin’ BBQ Cauliflower Tacos” with you all, because it was a recipe that called out to me. It was pretty much the first nice day of the year (and almost the end of April, thanks climate change!) so I decided to bring a little Tex-Mex flavor out into the sunshine with me. I made the Have-It-Your-Way BBQ Chipotle sauce from the book, but you could use any BBQ sauce you like (although the recipe from Great Vegan BBQ was worth getting the book for!). You won’t need the entire 2 cups for the recipe, as you’re just going to dip the cauliflower before baking. I also added some jalapeños, scallions, cilantro and limes for garnish and added flavor. This is also a perfect chance to try out my most recent recipe for mushroom tortillas!

Boot Kickin’ BBQ Cauliflower Tacos
Ingredients
- head cauliflower
- 2 cups (480 ml) Have-It-Your-Way Chipotle BBQ Sauce (on page 162 of Great Vegan BBQ) or store bought
- 6 flour or corn tortillas
- Vegan refried beans (most brands are vegan)
- Shredded red cabbage
- Diced tomatoes
- Salsa
- Avocado slices
- Vegan cheese
Instructions
- Preheat the oven to 375°F (191°C).
- Remove the leaves from the cauliflower and slice in half down the center of the stem. Slice each half into steaks about 1 inch (25 mm) thick. Repeat on the other half.
- Bring a large pot of water to a boil. Add the cauliflower steaks and any extra florets you may have. Boil for 10 minutes or until you can easily pierce the cauliflower with a fork. They should be tender, but not falling apart soft. Drain and place in a shallow baking dish.
- Coat the cauliflower in the BBQ sauce and roast for approximately 25 minutes, or until the cauliflower is slightly charred and the sauce is dark and caramelized.
- Heat the tortillas and fill with the refried beans, cauliflower, cabbage, tomatoes, salsa, avocado slices and vegan cheese.
