Perfect Vegan Oven-Roasted Potatoes
Crispy on the outside, soft on the inside. Like a fry, but not fried. Delicious plain, with ketchup, or any other of your favorite condiments. These are the perfect vegan oven-roasted potatoes- not too crunchy, flavorful, and cheap and easy. Just how I like my food. We had a lot of oven-roasted potatoes when I was growing up- it was an easy way to keep kids happy and a great accompaniment to whatever leafy green or Brussel sprout we were being distracted from.

Don’t Hate Carbs- Carbs are Friends (and Food)
A lot of people have a bad association with potatoes (and bread, pasta, carbs in general). There have been a lot of carb scares over the years, and potatoes have often been pointed out as culprits. And to be fair, potatoes are often served in a whole lot of fat- as fries, as chips or mashed with loads of butter and cream. But potatoes themselves are delicious, and I’ve never bought into the high-protein, low carb type diets.

How to Make Roasted Potatoes
Three steps-
- Slice: Make them fairly thin for a crispier potato, but most importantly make them uniform.
- Coat: I used my favorite mix of herbs and oil, but change it to your liking!
- Bake: 25 minutes in a hot oven will give you crispy on the outside, soft in the middle, perfect potatoes.
It’s always good to have some simple and delicious side dishes, you can use to fill out whatever meal you’re making that night. This one is perfect for that purpose- it’s super easy to put together. Slice potatoes, toss in oil and herbs, and bake. I used thyme, oregano, nutritional yeast, rosemary and parsley, but you could change the spices to some others if you prefer. After 25 minutes or so, you have yourself a delicious side dish.
Perfect Vegan Oven-Roasted Potatoes
Ingredients
- 2 pounds potatoes
- 2 TBPS. olive oil
- 1 tsp. nutritional yeast
- 1 tsp. dried thyme
- 1 tsp. dried parsley
- 1 tsp. dried oregano
- 1 tsp. dried rosemary
- ¼ tsp. salt
- ¼ tsp. black pepper
Instructions
- Preheat the oven to 400°F (200°C). Slice the potatoes into thin disks, about ¼ inch thick Toss in oil. In a small bowl mix together all the spices add to the potatoes and toss.
- Place on a baking sheet in a single layer and bake until soft on the inside and crispy on the outside- about 25 minutes.
