Super-Food Vegan Seed Pâté

Savory spreads are (forgive the pun) my jam! They are something I have only recently gotten into, but since then I order a pâté at every available opportunity. While there are many ways to make a vegan pâté, this one is seed-focused. With chia, flax, sesame, sunflower, pumpkin, poppy seeds and pine nuts (which are often considered seeds), this vegan seed pâté is super seedy- but you’d never know! It’s rich and creamy, with a savory flavor, solid enough to hold it’s shape but soft enough to spread easily on a cracker or bread. This vegan seed pâté is perfect for an appetizer, or as sandwich spread.
Seeds have a lot of micronutrients, and eating them is a great way to get those different nutrients we need. Chia seeds, for example, are high in calcium. Pumpkin seeds contain a lot of protein and iron. Sesame seeds can help maintain healthy cholesterol levels. Flax seeds have omega 3 fatty acids- something meat eaters get from fish, but is a little harder to get in a vegan diet. Sunflower seeds have vitamin B6, and a whole range of other vitamins and minerals food good health. I’m not one to eat something just for health benefits- I think food needs to be enjoyable too. That’s where this vegan seed pâté comes in- it’s delicious, and absolutely packed with healthful seeds. A superfood, super-seed collection of rich, savory pâté flavor spread on crackers.
Pâté is traditionally made out of liver- but vegan pâté takes many forms. Walnuts, buckwheat and mushrooms are all common vegan pâté variations. I made one myself last summer, using wild foraged maitake mushrooms and black walnuts. The inspiration for this pâté actually came from reading the description of a dish in a restaurant. They made a raw seed pâté using sunflower seeds, and a little bit of dulse. I was going down to Florida for a friends wedding, and did a little research ahead of time. I was really excited to get to try this raw café (although raw isn’t typically my scene), but when I arrived the place looked decidedly closed. There were at least three different sets of hours located online, and my dream for raw seed pâté had been crushed. The wedding was beautiful; my friend got married; Florida was warm and sunny; the Thai food we got instead delicious, but I was a little let down from the loss of our raw seed pâté. So, I made my own multi seed vegan pâté back on the snowy coasts of New England. The recipe is simple- we soak the seeds to make them soft and to get the chia and flax seeds to bloom, and then blend everything together- voila, we have vegan seed pâté.
Super-Food Vegan Seed Pâté
Ingredients
- 2 TBSP. chia seeds
- 2 TBSP. flax seeds
- 1 cup pumpkin seeds
- 1 cup sunflower seeds
- ¼ cup pine nuts
- 1 tsp. sesame seeds
- 1 tsp. poppyseeds
- 1 tsp. lemon juice
- 2 TBSP. soy sauce
- 2 cloves garlic
- 1 TBSP. nutritional yeast
- 1 tsp. dulse flakes
Instructions
- Place the chia seeds, flax seeds, sunflower and pumpkin seeds in a large bowl of water, and soak for several hours or preferably overnight.
- Drain the extra water from the seeds, and place in a blender along with the remaining ingredients. Blend until smooth, and serve.
