Brightening Up Winter

About 98% of the time I stick to three beverages- coffee, water, and beer – usually in that order throughout the day. But in winter, I sometimes need a little extra to make it through the day. It’s dark, cold, and the days are short. It can be pretty hard to motivate myself to do much beyond find a blanket, curl up, and watch some TV- but of course, not doing something productive with my day usually ends up with me feeling worse. I’ll often make some sort of a vegan latte, and occasionally I’ll do a fancy mixed drink, but it’s good to have un-caffeinated, non-alcoholic options as well. And that’s where this comes in! It’s super refreshing, zingy, and flavorful. Bright, cheerful, and worth turning off the TV for. The ginger in it will actually help you fight off colds, and the spice in it gives you a little warmth in your belly. Now go- drink this pineapple seltzer and be productive! Or drink it and watch TV, whatever wellness looks like for you.

How to Make Ginger Pineapple Seltzer

In my recipe, I said this takes 2 minutes to make- that’s if you’re doing it leisurely! To make it, mix all the ingredients except the soda water in a jar, and give it a good shake to combine. Pour it into your drinking glass, and then pour the soda water in on top. Done. You can add ice cubes if you like, although if you do you might want to reduce the amount of soda water so the ginger and pineapple don’t get too diluted.

There is a way to make this recipe take longer- juice your own ginger. You can buy it- look for something near 100% ginger juice, unsweetened-  but I have a juicer so I decided to make my own. I got about 1 1/2 cups of juice from 1 lb. of whole ginger. That’s a whole lot of these pineapple seltzers, and I’m pretty pleased about it! You can also add ginger juice to just about anything you would use fresh ginger in, plus use it in dressings, add a little to your homebrewed kombucha, make a wellness shot, and more!

Super Refreshing Ginger Maple Pineapple Seltzer

Ingredients

  • ½ cup pineapple juice, chilled
  • ½ lime, juiced
  • 2 tsp. maple syrup (or more taste!)
  • 2 tsp. ginger juice
  • ¼ tsp. cinnamon
  • ½ cup carbonated water, chilled

Instructions

  1. Combine the pineapple juice, lime juice, ginger juice, maple syrup and cinnamon in a jar and shake well to combine. Pour into a glass. Add the carbonated water, mix a little, and enjoy!

Notes

Note: This recipe is meant to create one serving, but you can easily scale it up to create multiple servings.
