Roasted Red Pepper Vegan Miso Mayo

Baby Vegan Inspiration
When I graduated from college I decided to give veganism a chance, and I did that by just not buying animal products anymore. I was already a vegetarian, so I slowly ate through the cheese, eggs, and dairy that I had on hand and then did without or replaced them with vegan alternatives. And this was about 7 years ago now, and there weren’t as many vegan options out there- plus as a newly graduated college student I was on a pretty tight budget. I didn’t really have a ton of room to try expensive vegan cheeses and meats, but I did a little bit of trial and error. I lived right next to the food co-op, and they had lots of interesting options. And one item I found that I fell in love with was a miso mayo by So Good Foods (it’s still on the market, you can go get some!) Because it has added flavors to it, it’s a lot more interesting than traditional mayo- it’s really a step up! When I moved back to the east coast a couple months later, I moved away from my little food co-op and at the time I wasn’t able to find this miso mayo anymore. And so I made my own, and wrote the recipe down in a google doc, and totally forgot I had done that. It might have been the first recipe I’ve ever written- certainly the first vegan recipe I’d written. I went off and worked an office job, but years later recipe creation would be my fulltime job. And this isn’t my original miso mayo recipe- it’s simpler and better than my first attempt- but it’s a beautiful little full-circle moment for me. How to Make Vegan Miso Mayo
I included this paragraph because it’s part of my usual post format, but I really didn’t need to. This recipe is made by putting all the ingredients in a blender and blending. There aren’t really any tips or tricks, and I can’t think of any questions that might need clarification- let me know if you have any, but otherwise just consider this paragraph a bit of a waste of space. Roasted Red Pepper Vegan Miso Mayo
Ingredients
- ½ cup silken tofu
- ½ cup marinaded roasted red peppers
- ¼ cup vegetable oil
- ¼ cup light miso paste
- 2 tbsp. white vinegar
- 1 clove garlic
- ¼ tsp. salt
Instructions
- Combine all the ingredients in a blender and blend until smooth. Transfer to a jar and store in the fridge.
