2 Ingredient Vegan Whipped Apple Cider Butter

Silky smooth, rich, and light, this apple cider butter tastes like it’s straight from the orchard. It’s fluffy and intensely apple cider flavored, with caramel notes and a whole half gallon of cider condensed down into a single batch of butter. And when I say apple cider flavored, I mean apple cider flavored, not just apple flavored. Best of all, this delicious spread only uses two ingredients, with a few ideas for optional flavors to make it your own. With apple season in full swing, it’s time to start your day in a seasonally appropriate way- with apple cider butter toast.

Apple Picking Season
One of my favorite things about Fall is apple picking- I love going out into the orchards, seeing the stunning displays of fall foliage, tasting apples from the different trees, and coming back with a nice half bushel of apples. Since that ends up being about 25 lbs. of apples, and I also enjoy not being the one carrying it through the orchard. It’s the thing to do in New England in Fall. In the past couple years we’ve started going to a place that allows dogs (which are few and far between), so we can take our pup Dougie with us. He gets really excited about the whole affair, and ends up taking Chad or I on a high-speed sniff-fari through the orchard, while whoever is not with Doug takes on the apple picking. We also make sure to go on a cloudy or rainy day, and usually get the place to ourselves.
Once the apples are back in the car, the cider is purchased (because fresh apple cider is basically a requirement of apple picking), it’s time to head home and eat our way through 25 lbs. of apples. It’s a challenge, but one I adore. I have yet to make it to the orchard this year- I think it’s going to end up being a late year for us, with how our schedules going- but I did manage to pick up some cider. So even without the surplus of apples, it can taste like apple picking season.

Tips and Tricks for Making Apple Cider Butter
- This recipe uses a vegan butter. Look for a vegan butter in stick form, and intended for baking, as tub butters tend to have a higher moisture content that may not work out well in this recipe.
- The only two ingredients required for this recipe are apple cider, and a vegan butter. However, you can add a little flair with optional add-ins! Try a couple tablespoons of maple syrup for a sweeter, maple flavored butter. Add a tablespoon or so of miso paste for some caramelly, sweet-and-salty vibes. Or add a little cinnamon, pie spice, or cardamom for a spiced apple flavor.
- This was intended as a toast-topped, but with a little added powder sugar whipped in it would make a truly delicious frosting for fall cakes.

2 Ingredient Vegan Whipped Apple Cider Butter

Ingredients
- 1/2 gallon apple cider
- 1 stick (1/2 cup) vegan butter
Instructions
- Pour the entire 1/2 gallon of apple cider into a large pot on the stove. Bring to a boil and reduce to a simmer, stirring occasionally, and allow the juice to cook down. Cook down until there is no more steam- it will be about 1/8th of the original volume. Make sure to keep a close eye on the cider towards the end so it doesn't burn. Transfer the cider to the bowl of your mixer, and then place in the fridge and allow to cool fully.
- Once cool start to whip your cider in a stand mixer. Increase the speed until it is light and fluffy. Turn off the mixer, and add the vegan butter in several large chunks. You can also add any additional ingredients now, if you wish. Turn the mixer back on, slowly at first, and increase the speed until it is the texture of butter cream. Make sure to stop and scrape down the sides of the bowl at least once so that everything is incorporated. Transfer to an air-tight container, and store in the fridge.

Optional add-ins include: 2 tbsp. maple syrup, for sweetness 1-2 tbsp. miso paste 1 tsp. cinnamon, cardamom, or pie spice
