Giant white beans slathered in warm, bubbling, spicy vegan buffalo sauce and covered in a thick layer of melted, stretchy vegan cheese might be the ultimate vegan appetizer. The perfectly creamy, giant white beans are a wonderful complement to the spicy buffalo sauce. And no one can resist some good old fashioned melty cheesy goodness, especially when no cows were harmed from the milk for that cheese. There’s no better way to meet with friends than over a table laden with food- be it dinner at a fancy restaurant, or chips and dip on the porch. Appetizers are a great way to combine a casual get together with tasty food offerings. And since appetizers are smaller, and not really meant to be a whole meal, the food tends to be more luxuriant, flavorful, and bold. These vegan giant buffalo beans have all the bold flavors, with very little fuss. Giant White Beans, and Where to Find Them

This giant buffalo bean appetizer is as great as they are, in large part because of the beans. Which are quite large. There are several varieties of large white bean that could work in this recipe- you could use a large white lima bean (available in some supermarkets, or here), or a Greek bean known as Gigante. If you’re eating these beans more like a casserole than an appetizer, you could get along well with a less gigantic sized bean (such as Great White Northern beans or Cannellini beans). I used a Royal Corona bean from Rancho Gordo.

Trying these different types of bean makes you realize how much the legume family has been dumbed down for us, leaving supermarket shelves stocked with none but the least flavorful and most basic varieties.

Giant Buffalo Beans- White Beans in Buffalo Sauce

Ingredients

  • ½ lb. dried large white beans
  • ½ cup mild hot sauce
  • 1/3 cup coconut oil or vegan butter
  • 2 tbsp. apple cider vinegar
  • 2 tsp. garlic powder
  • 2 cups vegan cheese shreds
  • 1-2 scallions, chopped
  • ¼ cup fresh parsley, chopped

Instructions

  1. Boil your beans in water and cook until soft, but not mushy. Drain and set in a glass oven-safe container. Preheat the oven to 475°F (245°C).
  2. Add the hot sauce, vegan butter, apple cider vinegar and garlic powder to a saucepan. Cook, stirring well, until it is well combined and slightly thicker. Pour the sauce over your beans, and fold to cover all the beans in sauce. Top with vegan cheese and place in preheated oven for 10-15 minutes, until the sauce is bubbling and all the cheese is melted.
  3. Remove from the oven and top with fresh parsley and scallions. Serve warm.

Notes

Serving Ideas: 1. For an extra bit of creaminess, serve with a vegan ranch-style dressing.

2. For a complete and filling family meal, serve these beans along with your favorite taco fixings in tortillas. No one can resist buffalo bean tacos!

3. Want to go a little healthier? Skip the vegan cheese and add a little nutritional yeast instead.
