Vegan Savory Banana Fritters
Crispy on the outside, creamy in the middle, these savory banana fritters have a tropical flavor that will keep you coming back. Seconds Bananas
As grocery prices have increased, I find myself scouring seconds tables and discount shelves even more than I typically do. It means my cooking style has been focused around the produce I can get inexpensively and cook quickly. So when I found a bag of around 20 bananas for $1.50, there started being more banana recipes going on in the house. Bananas don’t have the longest shelf-life, afterall, and these ones were already on the way out before I even brought them home. I ate a few, made banana bread, and both my mom and dad made banana cakes. But 20 bananas can take a while to get through, so even with all that banana action going on I had plenty left over, and was hoping to find a good, savory banana recipe to shake things up. So I started experimenting with these fritters. I used chickpea flour at first, but those ended up being too heavy, so I opted for rice flour instead. Perfectly light and crispy. It didn’t come to it for me, but a good last resort for bananas are your freezer. You can cut them into slices and freeze them, and then use them in banana “nice cream” or smoothies. You can also mash your bananas one at a time and freeze them. Grab them out of the freezer when needed, and use your mashed banana as an eggs substitute.

How to make Savory Banana Fritters
The main ingredients in these fritters are bananas and rice flour- after that it’s basically about flavor. Start by placing your bananas in a large bowl, and giving them a good mash. Add finely diced jalapeno and onion- you do want them chopped fairly small, or they’ll break up your fritters. We have a series of spices that are added in, along with a small amount of baking powder to make your fritters just a little lighter. And to add to the bulk and give us a crisp exterior we used rice flour (not glutenous rice flour), and then use a plant-based milk to get our batter the texture we want. If you wanted, you could use the same banana, rice flour, baking powder, and plant-milk ratios, and add other spices to your taste. You could even make these into sweet fritters, if you prefer.
Once your batter is made, scoop out tablespoons of it onto a hot skillet, and flatten slightly. Cook until golden, flip, and let the other side cook.
For a dipping sauce, I made a simple mix of maple syrup, soy sauce, rice wine vinegar, and garlic chili paste. The sweet and tangy sauce works really well with the sweetness from the banana in the fritters, and really only needs a whisk to bring it all together. I recommend eating these savory banana fritters right away, nice and fresh, as they lose a little of their great crispiness as they sit out.
Vegan Savory Banana Fritters
Ingredients
- 2 ripe bananas
- ½ onion, finely diced
- ½ jalapeno pepper, finely diced
- ½ cup rice flour
- ½ cup soymilk, or other plant-based milk
- 1 tsp. garlic powder
- ½ tsp. dried ginger
- ¼ tsp. ground cloves
- ¼ tsp. curry powder
- ¼ tsp. salt
- ¼ tsp. black pepper
- ¼ tsp. baking soda
- Oil, for cooking
- 2 tbsp. maple syrup
- 3 tbsp. soy sauce
- 1 tbsp. rice vinegar
- 1 tsp. garlic chili paste
Instructions
- Peel and place the bananas in a large mixing bowl. Use a fork to mash well. Add the remaining ingredients for the fritters, aside from the cooking oil, and mix until there are no lumps.
- Heat a skillet on the stove top medium or medium-high, and add a small amount of oil. Once hot, scoop a tablespoon or so of batter into the pan, flattening it somewhat with the back of the spoon. Repeat until your skillet is full. Once the bottoms of the fritters are golden brown, flip the fritters and cook until the second side is browned. Remove from the heat, and cook until all the batter is used.
- To make the dipping sauce, simple whisk the maple syrup, soy sauce, vinegar, and chili paste together. Serve the sauce with cooked fritters, and enjoy!
