Vegan Vindaloo Savory Sweet Potato Oatmeal

This spicy and creamy vegan vindaloo is a great addition to your weeknight dinner routine. It’s vegan and gluten-free, and can be made all in one pot. If savory sweet potato oatmeal sounds a little strange to you, give it a chance! The oats have a nice texture, not too mushy, and work really well with the spicy coconut vindaloo flavors and the sweetness from our sweet potatoes.

Savory Oatmeal for Dinner

I honestly have never been the biggest oatmeal fan- I’ll eat it, but it’s rarely my first choice. Something about the goopy, gluey texture has never been my favorite. That’s why it was sort of surprising to me that when I tried this savory oatmeal I really liked it. I don’t know why it is exactly, but somehow even underneath all the vindaloo spices I could taste more of the oats. They stuck together less and were less gloopy, and it really worked for me.

It made me really start thinking about how oatmeal could be more than just, well, oatmeal, and oats could be appreciated in more savory ways. Topped with sautéed mushrooms, perhaps, or paired with smokey cooked greens. You could eat it like congee, pasta, or risotto. You could play with how thick or soupy you cook your oats. I might try adding blending it up and adding it to creamy soups to thicken it.

Really there’s no reason oatmeal needs to be restricted to the breakfast table with a sprinkle of cinnamon. It’s a whole grain, heart healthy, gluten-free, and affordable option, so let’s start thinking creatively about how we can make oats taste great at every meal.

How to Make Vegan Vindaloo Sweet Potato Oatmeal

Oatmeal for dinner might not be the first thing that comes to mind, but it shares something with oatmeal for breakfast- it comes together quickly without much fuss. Not your traditional “breakfast for dinner”, but perfect for a weeknight. Start by prepping all your vegetables and setting them to the side. In a hot skillet you’re going to cook the sweet potatoes until they start to get a little color, and then follow it up with the garlic, ginger and spices (star of the show is this Vindaloo spice). Give your spices a little toast, stirring them so they don’t burn, and then add coconut milk and water. Let the sweet potatoes get soft and tender before adding your oats. After a handful of minutes, taste your oatmeal for salt and pepper, and serve it up. It’s great with a fresh salad, and garnished with creamy vegan sauces and dressings and chutneys.

Vegan Vindaloo Savory Sweet Potato Oatmeal

Vegan Vindaloo Savory Sweet Potato Oatmeal

Ingredients

  • 1 ½ lbs. sweet potatoes
  • 1 medium-sized onion
  • Oil for cooking
  • 4 cloves garlic
  • 1 tsp. grated ginger
  • 1 tbsp. vindaloo spice
  • ½ tsp. ground turmeric
  • 13.5 oz. can full-fat coconut milk
  • 2 cups old fashioned oats
  • Salt and pepper, to taste

Instructions

  1. Start by prepping your vegetables. Peel your sweet potatoes, and cut them into small ½ inch cubes. Dice the onion. Mince the garlic and grate the ginger.
  2. Heat some oil in a large pot. Once hot add the sweet potatoes and onions. Cook, stirring occasionally, until the sweet potatoes soften slightly and start to brown. Add the garlic, ginger, vindaloo, and turmeric. Sauté, stirring, until fragrant.
  3. Add the coconut milk and 2 ½ cups of water. Bring to a simmer, and cook until your sweet potatoes are completely soft. Add the oats, season with salt and pepper, and continue to gently simmer. Once the oats are soft, dinner is served!
