All About Soba

Soba noodles are a Japanese noodle, made entirely or partially from buckwheat flour. They have a slightly nutty flavor, and are roughly the thickness of spaghetti. Buckwheat itself is gluten-free, and some soba noodles are made with 100% buckwheat. Others have a certain amount of wheat flour mixed in, so if you are gluten-free make sure to check the label to insure you get buckwheat with no wheat. The noodles themselves are tan to grey. They are very versatile, and can be used in soups, salads, or stir-fries.

As mentioned previously, soba can be made either completely with buckwheat flour or with a mixture of buckwheat and wheat flour. Because of that, buckwheat noodles can be gluten-free, but aren’t necessarily. Compared to wheat-based pasta, soba is higher in protein and fiber, and contain a healthy dose of thiamin and manganese.

Soba noodles come dried, often with a paper band dividing them into portions. They can be found at Asian groceries, and some supermarkets. You can also easily purchase them online, if that is easiest for you.

How to Make Stir-Fried Soba with Beets

This noodle dish is meant to be simple enough that you can enjoy them on a weeknight evening. To start off, we chop and roast our beets covered in seasonings. Personally, I don’t bother peeling my beets- the peels are just a little tougher to the rest of the beets, but not much. While the beets are roasting, you can chop the remaining veggies. We have garlic, onion, radicchio, scallions, and cilantro. You also need to pre-cook the noodles, and once they’re done rinse them in cool water.

After that we can bring it all together in a large skillet. Cook the onions, radicchio, and garlic first. Once those are smelling great, add the ingredients for the sauce. When you do that the sugar in the sauce will melt, and it will all start to come together. Toss in the beets and cooked noodles and stir it all around until the noodles are all coated in sauce. From there you can season with salt and pepper to your tastes, and top with the fresh cilantro and scallions.

Ingredients

    For the Beets:
  • 1 lb. beets
  • 2 tbsp. soy sauce
  • 2 tbsp. vegetable oil
  • 1 tsp. sesame oil
  • 1.2 tsp. ground Sichuan peppercorns
  • 1 tsp. fresh ginger
  • 2-3 cloves garlic
  • ½ tsp. rice wine vinegar
  • For the Noodles:
  • 9.5 oz. (3 bundles) of buckwheat noodles
  • Oil, for cooking
  • ½ onion
  • 2 cloves garlic
  • 1 cup shredded radicchio
  • ¼ cup soy sauce
  • 2 tsp. rice wine vinegar
  • 1 tbsp. brown sugar
  • A handful of fresh cilantro
  • 3 scallions

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking tray with a silicone mat, or parchment paper. Wash your beets, and slice them into small cubes. Grate or mince the garlic and ginger, and combine with the remaining ingredients needed for the beets. Stir to combine, and then add the beets to coat in the dressing. Spread the dressed beets out on the baking tray, and cook for 30-45 minutes, until easily pierced with a knife.
  2. In the meantime, cut the onion into half-moons, mince the garlic, shred your radicchio, and chop the scallions and cilantro. Next cook your soba noodles as directed on the package. Once al dente, drain, and rinse with cool water to remove excess starch and prevent them from becoming gummy.
  3. Heat some oil in a large skillet on medium heat. Once hot, add the onion, garlic, and radicchio, and cook, stirring, until the onion is translucent. Add the soy sauce, vinegar, and brow sugar, stirring, until the sugar has dissolved. Add the cooked soba and beets, tossing so they are completely covered in the sauce. Turn off the heat, season with salt and pepper to taste, and top with fresh cilantro and scallions.
