Vegan Probiotic Salad Dressing Recipe
Make all your favorite salads sing with this vegan probiotic salad dressing. It’s perfectly salty, garlicky, and has that great touch of probiotic tang. The sourness in this recipe comes from sauerkraut, blended with olive oil for a vinaigrette-like dressing but with a bit more funk.

Why Salads Need Dressing
I don’t usually talk much about nutrition, so just a heads up that I will be discussing it a bit in the paragraph here. If you go ahead and skip past this, the nutrition discussion will be done.
Salad dressing can sometimes get flack from the calorie-conscious for adding fats to your formally low-fat meal. But please, don’t try and cut corners by eating a naked salad. Salad dressing adds so much flavor to your greens- in this case, we’re getting that great garlicky tang- but that’s not the only benefit. If you want a salad to help keep you full and fueled, the added calories that dressing gives you will really help you feel satiated. But wait- there’s more!
The vitamins in our food are either soluble in water or in fat. Fat soluble vitamins include Vitamin A, D, E, and K, which are often found in lettuce and additional greens. So if you just chuck an undressed, fat-free or low-fat salad down your throat, you’re basically taking those lovely vitamins you’ve gone through the effort to eat and telling them to take a hike. And you’re missing out on those micronutrients your body needs. Carotenoids, an antioxidant found in many orange colored vegetables like carrots or bell peppers, are another fat-soluble compound you will miss out on if your salad is undressed.
I want to stress that I am not a nutritionist, but I do think that we can all improve our relationships with food. I think we can all use a reminder that foods that are sometimes demonized like salad dressings aren’t bad foods- in fact, you’re not getting everything you can from your salads without them.

How to Make Probiotic Salad Dressing
This salad dressing is really easy to make- you’re just going to throw all the ingredients in to a glass jar, and blend with an immersion blender. Alternatively, you can make it in a standing mixer if you prefer. For this recipe you will need sauerkraut, olive oil, and garlic. I did try an oil-free version using tofu instead of the olive oil, and it was good but not as good as the olive oil version. You’ll also want salt and pepper, but since sauerkraut has a good amount of salt in it make sure you try your dressing before adding salt to it. Finally you’ll want to add a little water, just to get the dressing to a place where it’s easy to pour. Store in the fridge, and take out a few minutes before serving to let the oil warm up. Give it a good shake, and use to top your favorite salads.
Vegan Probiotic Salad Dressing Recipe
Ingredients
- ½ cup sauerkraut
- ½ cup olive oil
- 2 cloves garlic
- Salt and pepper, to taste
Instructions
- Add all the ingredients into a jar, and blend with an immersion blender until smooth. Add water, a tablespoon at a time, until it has reached your desired thickness. Store in an airtight container in the fridge, and shake well before using.
