Curried Purple Sweet Potato Soup

Purple Sweet Potato Soup Tips and Tricks
- You don’t need to be too fussy chopping your vegetables, since it’s all going to be blended in the end. A rough chop will do juice fine.
- I recommend garnishing with chopped cilantro and lime juice. Crispy shallots are also a great addition, and for a more filling option you can pour your soup over noodles, tofu, and steamed vegetables.
- I like to set aside a few tablespoons of coconut milk so that I can add a coconut milk garnish when serving.
- Purple sweet potatoes act as an indicator, the same way red cabbage does. Because of that, the more lime juice (or other acid) you add to this soup, the pinker it will be.
Curried Purple Sweet Potato Soup
Ingredients
- Oil, for cooking
- 2 tsp. red chili flakes
- 1 tsp. cumin seeds
- 1 onion, diced
- 1 tbsp. hot curry powder
- 1 tsp. garam masala
- 1 tsp. grated ginger
- 3 cloves of garlic, roughly chopped
- 2 lbs. purple sweet potato, peeled and cut roughly into cubes
- 4 cups of vegetable stock or water
- 1 can of full fat coconut milk
- Salt and pepper, to taste
- Fresh limes, for serving
- Chopped cilantro, for serving
Instructions
- Heat the oil in a large pot on a medium heat. Add the chili flakes and cumin seeds, and cook until the cumin seeds start to pop. Add the onions, and sauté until they become translucent. Add the spices, garlic and ginger, and sauté until fragrant. Add the sweet potatoes, stir to coat in the spices and oil, and top wit the vegetable stock and coconut milk.
- Bring the broth to a simmer, and cook until the potatoes are soft and easily pierced with a fork.
- Transfer to a blender and blend until smooth. Return to the pot and season with salt and pepper to taste. Add lime juice to taste, or serve with lime wedges, and top with cilantro.
