Curried Purple Sweet Potato Soup

This wintry purple sweet potato is flavored with curry powder, chili, and finished with lime juice for a rich, sweet, spicy, and tangy medley of flavors. Thick, creamy, and silky, this soup is the perfect way to brighten up a dull, dreary, late winter day with its vivid magenta hue. No worries if there are leftovers, as this soup only gets better from a day or two in the fridge.

About Purple Sweet Potatoes

The color purple is a favorite of mine. It has the calm, cool nature of blue, with hints of passionate, fiery red- it’s the meeting place of the warm and cool color spectrums. From fragrant lavender, to sweet clover, shiny eggplants, the early spring buds of lilac, the dark edges of the sunset, pulling in the night, purple is a moody, calming color, that talks to me about transitions.

There are a few types of purple sweet potato, as well as a few sweet potatoes with purple skin and white flesh. We used a Stokes Purple sweet potato, which along with Okinawan sweet potatoes are the most common varieties. Ube is an increasingly common purple yam, which is not technically a sweet potato. I’m not sure if it would work well for soup or not. While purple sweet potatoes and orange sweet potatoes have a lot in common, the purple varieties are a bit more starchy, a little less sweet, and contain a large amount of anthocyanin (the same antioxidant that are in blueberries, except much more!). Like other sweet potatoes they have healthy amounts of fiber and vitamin C.
Purple sweet potatoes can be used in all the same way as orange sweet potatoes- from soups, to roasted, gnocchi, fries, dips, pie, and more.

Purple Sweet Potato Soup Tips and Tricks

  • You don’t need to be too fussy chopping your vegetables, since it’s all going to be blended in the end. A rough chop will do juice fine.
  • I recommend garnishing with chopped cilantro and lime juice. Crispy shallots are also a great addition, and for a more filling option you can pour your soup over noodles, tofu, and steamed vegetables.
  • I like to set aside a few tablespoons of coconut milk so that I can add a coconut milk garnish when serving.
  • Purple sweet potatoes act as an indicator, the same way red cabbage does. Because of that, the more lime juice (or other acid) you add to this soup, the pinker it will be.

Curried Purple Sweet Potato Soup

Ingredients

  • Oil, for cooking
  • 2 tsp. red chili flakes
  • 1 tsp. cumin seeds
  • 1 onion, diced
  • 1 tbsp. hot curry powder
  • 1 tsp. garam masala
  • 1 tsp. grated ginger
  • 3 cloves of garlic, roughly chopped
  • 2 lbs. purple sweet potato, peeled and cut roughly into cubes
  • 4 cups of vegetable stock or water
  • 1 can of full fat coconut milk
  • Salt and pepper, to taste
  • Fresh limes, for serving
  • Chopped cilantro, for serving

Instructions

  1. Heat the oil in a large pot on a medium heat. Add the chili flakes and cumin seeds, and cook until the cumin seeds start to pop. Add the onions, and sauté until they become translucent. Add the spices, garlic and ginger, and sauté until fragrant. Add the sweet potatoes, stir to coat in the spices and oil, and top wit the vegetable stock and coconut milk.
  2. Bring the broth to a simmer, and cook until the potatoes are soft and easily pierced with a fork.
  3. Transfer to a blender and blend until smooth. Return to the pot and season with salt and pepper to taste. Add lime juice to taste, or serve with lime wedges, and top with cilantro.
