Almond, Oat and Vegan Apple Cookies

Soft and sweet with a little crunch, these cookies epitomize the wholesome Fall cookie, without making any sacrifices in flavor. These vegan apple cookies are sweetened with maple syrup, held together with almond butter, and punctuated with hearty oats and sweet, seasonal apples. Spiced with pumpkin pie spice (it’s not just for pumpkins!), the whole experience reminds me of fall. My biggest complaint about these cookies is that I haven’t eaten enough of them, because my boyfriend kept on eating them all.

Breakfast or Dessert?

What I love about these cookies, is they are very true to their ingredients. There isn’t a lot of other stuff going on, distracting from the flavor. They contain tastes that remind me of fall (apples, maple, pumpkin pie spice), as well as almond butter, which isn’t a fall flavor but tastes really good with the other ingredients. This is another dessert recipe that I’ve been enjoying as a breakfast– I really do like baking at night and having some to eat the next morning.

Making Vegan Apple Cookies

I love a pop of color in my cookies, and apple skins have never bothered me- however, if that’s something that is going to upset you, go ahead and peel the apples first. For the rest of us non-peeling sorts, a quick chop of the apples into small cubes is all you need, before tossing them in a bowl with pumpkin pie spice. I used pumpkin pie spice here, simply because I had it around from a previous recipe. If you don’t have it around, just use cinnamon. It’s the main spice in pumpkin pie spice, and it will give you all the warm, sweet, spicy fall vibes you need. The rest is mixing all the ingredients together. The dough is a little sticky (what with all the almond butter and maple syrup), so if you’re finding it hard to work with chill it in the refrigerator before handling. Roll a heaping tablespoon of dough into a ball, and press to about a 1-inch thick disc on a cooking sheet. You can put the cookies fairly close together as they won’t rise much in the oven. Once the apple cookies are cooked, allow them to cool fully before storing them in an air-tight container.

Almond, Oat and Apple Cookies (Vegan)

Soft and sweet with a little crunch, these cookies epitomize the wholesome Fall cookie, without making any sacrifices in flavor. These vegan apple cookies are sweetened with maple syrup, held together with almond butter, and punctuated with hearty oats and sweet, seasonal apples.

Ingredients

  • 3 medium sized apples
  • 1 tsp. pumpkin pie spice, or cinnamon
  • 1/3 cup maple syrup
  • 2/3 cup almond butter
  • 1 TBPS. vegan milk
  • 1 cup all-purpose flour
  • ½ tsp. baking soda
  • Pinch of salt
  • 1 cup old fashioned oats

Instructions

  1. 1. Preheat the oven to 350°F (175°C) and line a baking tray with a silicone mat. Cut the apples into very small cubes (similar to how you would dice an onion). Place in a bowl and add the pumpkin pie spice and mix to cover every piece. Set aside.
  2. 2. In a large mixing bowl, add the maple syrup, almond butter, and vegan milk and combine. Next add the flour, baking soda and salt, and use and spoon and then your hands to combine in a sticky batter. Add the apples and oats, and combine well.
  3. 3. Scoop a heaping tablespoon into your hand, and roll into a ball. Place on the lined baking tray, and use the palm of your hand to flatten into a disc (about an inch thick). Continue until all cookies are formed (you will need to use multiple baking sheets or cook in batches). Place in the oven for 25-30 minutes, and let cool before eating.
