Blended Cookie Batter Overnight Oats

Smooth and creamy, this cookie batter overnight oats is a mix between breakfast and dessert. One of those breakfasts that might be a little sugar filled for an everyday breakfast, but it’s excellent for those days you need a little bit extra. It’s filled with the richness of peanut butter, and studded with walnuts and chocolate chips. Top it with a little cinnamon, and you’re basically eating cookies for breakfast.

Oats for Breakfast

I know I’m not the only one who grew up finding oatmeal a little boring, or perhaps found the texture to be kind of slimy. But it doesn’t have to be that way! My partner isn’t a picky eater, but generally refuses to eat oatmeal. These overnight oats are an exception, because they’re delicious but also because when they are blended the texture is fairly different. They have less of the “slimy” quality, and more of a smooth, pudding like texture. Oats are a great breakfast, if you find a recipe you like. They are so filling, filled with fiber, vitamins, minerals, and also relatively high in protein. They’re also a great option if you’re gluten-free, although you do have to make sure you get a variety that is certified that they’re not contaminated with wheat. They’re also supposed to be great for heart health!

How to Make Cookie Batter Overnight Oats

Overnight oats are really simple, which is why they’ve become really popular over the years. All you need to do is combine the oats with a plant-based milk, and whatever flavors you want, and leave it overnight in the fridge to thicken and hydrate. We made ours one step more complicated by blending our oats- although if you prefer chunky oats rather than a smooth porridge, you could certainly do without the blending. Making this porridge really is as simple as:

  1. Blend
  2. Wait
  3. Eat

You could also add other nuts or seeds if you like, switch up the peanut butter for a different nut butter, or add additional spices. It can also be eaten hot or cold- my partner prefers cold, but I really liked it hot since it melts the chocolate chips which is so tasty!

Yield: About 6 cups

Blended Cookie Batter Overnight Oats

Ingredients

  • 2 cups old fashioned oats
  • 2 tbsp. chia seeds
  • 2 tsp. cinnamon
  • ¼ tsp. salt
  • 3 cups oatmilk (or other plant-based milk)
  • ½ cup maple syrup
  • ¼ cup peanut butter
  • 2 tsp. vanilla extract
  • ½ cup vegan chocolate chips
  • ½ cup walnut pieces

Instructions

  1. Add the oats, chia seeds, cinnamon, and salt to a blender. Blend well, until you have a powder. Add the oatmilk, maple syrup, peanut butter, and vanilla, and blend again until smooth. If you want your chocolate and walnuts in large pieces, mix them in with a spoon. I prefer to pulse them in with the blender, so they get a little more broken up.
  2. Divide the mixture into jars, and let sit in the fridge overnight. Once thickened, enjoy! You can eat it cold, or heat it up if preferred. Just microwave for 30 seconds at a time, stirring in between, until you’ve reached the desired temperature.
