Flavor-Bomb Vegan Snacking Hominy Recipe

I try and make my recipe titles fairly informative, but this hominy recipe was hard to describe. In the end, I felt like the term “flavor-bomb” was the best way to describe it. This snackable hominy is fried in vegan butter, and then flavored with sugar, salt, chili flakes, lime, cilantro, and scallions. Basically, we just took all your taste buds and invited them to this hominy party. What is Hominy?

Fat, pillow-like, soft and a little chewy, hominy is whole maize kernels that have been treated to remove the hull. It is most often seen in pozole, a Mexican soup with hominy and chilies, but hominy can be used in other ways as well. It is often ground into a flour, and used to make tortillas or pupusas. But hominy on it’s own can be enjoyed too- this vegan hominy recipe uses hominy as the star ingredient, and flavors it to let it’s texture shine.

You can find hominy both canned and dried- dried will often have more flavor (especially when you’re consuming the cooking liquid like in soup), but canned is quicker and simpler to deal with. For this recipe, I find canned to be a fine option. Look for hominy in the International or Mexican section of your supermarket, by the canned beans. While hominy is no superfood kale or goji berry, it is one of the most nutritious ways to consume corn, containing a good amount of fiber as well as several important vitamins and minerals.

Making Flavor-Bomb Vegan Snacking Hominy Recipe

Starting with canned hominy, or rehydrated dried hominy, this recipe is fairly basic- we’re just frying hominy in vegan butter, and adding salt, sugar, lime, chili, cilantro and scallions. You want to get your hominy to the point where it’s turned a little golden, and has become slightly crispy, which may take 10 or so minutes. To do so, make sure that your heat is relatively high, but not so high that your hominy pops out of the pan- for me that was between the 6 and 7 mark on my stove, but play around until you hit the right spot. The other thing to keep in mind is you want enough butter to stop any sticking and to get it crispy, but you don’t want to be left with corn in a pool of butter. Start with less, and add more if needed. If your hominy is really buttery in the end, drain off any excess vegan butter before enjoying.

Flavor-Bomb Vegan Snacking Hominy Recipe

Ingredients

  • 1 15 oz. can hominy, or 1.5-2 cups of rehydrated hominy
  • 2-3 tbsp. vegan butter
  • ½ tsp. red pepper flakes
  • 2 tsp. sugar
  • ½ tsp. salt
  • 1 lime, juiced
  • ¼ cup cilantro, finely diced
  • 1 scallion, chopped

Instructions

  1. Drain your hominy, and place on a clean towel to pat dry. Set aside.
  2. Melt butter in a large skillet- start with 2 tablespoons, but if you notice the hominy sticking at any point add in the third. Add the hominy, red pepper flakes, sugar and salt, and cook, stirring occasionally, for several minutes until the hominy starts to become golden. If your hominy is popping a lot, turn the heat down a little. You want it to be as high as it can, as long as the corn is not literally jumping out of your pan.
  3. Once your hominy has a little golden color to it, add the juice of the lime to the pan. Continue to simmer until there is minimal liquid in the bottom of your skillet. Turn off the heat, and add the scallions and cilantro. Mix well to lightly wilt the herbs, before serving warm
